Spaghetti is the purist's pasta. No shape to hide behind, no fold to catch sauce — just the grain, the water, the extrusion, the drying. If the wheat isn't exceptional, you'll know. If the milling isn't fresh, you'll taste it. There is nowhere to hide in a strand of spaghetti.

Ours is stone-milled from heritage wheats grown in the UK. The bran and germ stay in — we don't strip them out for a whiter product. That's why it's darker than supermarket spaghetti. That's why it tastes of something.

Texture & flavour: Clean wheat flavour with depth — slight nuttiness, clean finish, none of the grey flatness of commodity pasta. Holds al dente longer than industrial pasta. Doesn't clump.

Cook it: Heavily salted water. Don't break the strands — let them soften into the pot. Pull at al dente, finish in the pan with the sauce. Aglio e olio, cacio e pepe, or a long-cooked simple tomato or my Fav in the late summer chopped warm cherry toms, garlic and salt. The grain does the work.
